Chicken Stroganoff with Noodles

1 x Maggie Stroganoff Recipe Base
500g stir fry chicken
1 large onion
100g baby spinach
140g red capsicum
200g green beans
2 tbsp sour cream
2 packs of Maggie Instant 2 Min Noodle 75g


1. Cut up the onion, red capsicum, green beans and spinach
2. Heat 1 tbsp of oil in frying pan. Brown the chicken. Then add all the veggies to the pan and cook for 5 mins
3. Add combined 1 1/3 cup (330ml) water and Maggie Stroganoff Recipe base, bring to the boil
4. Cover and simmer for 20 min or until chicken is tender, stir through sour cream
5. To cook noodles, break noodle cake into quarters. Cook in 1 1⁄2 cups (375ml) of boiling water in an 850 watt microwave oven on HIGH for 2 mins

To serve: arrange noodles on a plate, add chicken stroganoff on top. May be garnished with parmesan cheese and parsley if desired.
