In our time-poor society, the modern diet has shifted to one predominately made up of carbohydrates found in convenient processed foods, unfortunately resulting in the biggest obesity and diabetes epidemic we’ve ever seen. When you consume carbohydrates, they are converted into glucose by your body; the pancreas then secretes insulin (or it may need to be injected, in the case of Diabetics) to reduce blood glucose levels. Insulin is our fat STORING hormone; when we consume too many carbs our body will produce more insulin to help reduce the large amount of glucose in the blood.
On the flip side, if we have very little amounts of carbohydrates in our diet, we require less insulin, and therefore store less fat. Studies have shown that a low-carb diet can make it easier to lose weight, reverse Type 2 diabetes, reduce symptoms of Irritable Bowel Syndrome as well as reduce sugar cravings. By eating a low carb diet, you are sustained throughout the day by stabilising blood sugar levels and insulin release.
